Bread of creative cities in Santos

The UNESCO Creative Cities Network (UCCN), founded in 2004, is an association of 295 cities in more than 90 countries, recognized in recognition of their exemplary efforts to use cultural heritage and creativity for sustainable development. A city can apply for recognition in one of seven categories: crafts and folk arts, design, gastronomy, literature, cinema, media arts and music. Using the Sustainable Development Goals of the UN Agenda 2030 as the basis for planning, creative cities are using their designations to create a sustainable future for their communities and support the cultural producers of their international heritage. They also share knowledge and best practices with other cities in the network.
First inter-cluster project
In 2018, the International Institute of Traditional Knowledge Foundation (ITKIF), in partnership with the UNESCO Creative City of Gastronomy in Tucson, invited participation in the first project open to every city in the network. A project called Bread of Creative Cities was launched with the support of the UNESCO Creative City of Literature in Krakow to expand and improve the Days of Bread festival ahead of the XII UCCN Annual Meeting in Krakow and Katowice, Poland. The inspiration came from the words of the organizers of the Bread Days event in Krakow:
“... bread is a symbol of abundance and miracles, generosity and exchange... bread has a special function in the social and culinary culture, providing food and livelihood, and the methods of its preparation and the traditions associated with it are as diverse as itself world. ".
Opportunity to share gastronomic traditions and build relationships between UNESCO Creative Cities
Through the Creative Knowledge Online Platform, a communication tool developed by the ITKI Foundation, this project tells the stories of the Knowledge Keepers about each city's representative bread, defined as a culturally significant and traditional staple food made from flour and water. The creative processes of the Keepers of Knowledge—farmers, millers, artisan bakers, and home cooks—are described through texts, interviews, photographs, and videos. Cities can provide additional media content in their creative fields (poetry, lyrics, video clips, graphics, art, craft images, or other creative products) to help convey the cultural meaning of their bread. Practical itineraries and educational videos are available online and bring users virtually closer to the Custodians of Knowledge and the intangible heritage behind each city's recipes, ingredients, cooking methods and cultural significance.
Expanding Participation
During UCCN XII in Krakow and Katowice, the first results of the project were presented through an interactive mobile application consisting of applications from 33 Creative Cities from different clusters. The project was continued due to the high level of initial participation and the highlighting of the project as a positive example of inter-cluster cooperation at the plenary session of the XII Annual Meeting. The second edition of the project featured additional creative cities and new bakers. The book was also available in pdf format (preview here). Ahead of the UCCN XIII annual meeting in Fabriano, Italy in June 2019, ITKIF visited several interested creative cities to meet with bakers and local farmers to learn about their craft practices and the value of their work in communities.
Third edition of the project at UCCN XIV in Santos
After some further development of the Creative Knowledge Platform and the inclusion of new features, the ITKI Foundation and the UNESCO Creative City of Gastronomy in Tucson are launching the third edition of the project with the goal of attracting as many creative cities as possible. Our goal is to reach a new total of 150 with this third edition.
The third edition of the project will be characterized by new features:
Applications from each creative city can have multiple Lorekeepers (in previous releases, there were no more than one per city).
In honor of the Film Cluster, participating cities can optionally prepare a video interview with the local Keeper of Bread Knowledge.
Not only bakers can participate in the project, but also knowledge custodians involved in the supply chain, such as millers and farmers.
A side project will be developed with Santos Creative City to engage the city's bakers through video interviews and itineraries to be created using the Creative Knowledge Platform. During UCCN XIV, together with the ITKI Creative City of Film Foundation in Santos, UNESCO is organizing the Bread of Creative Cities event and a round table with local bakers.
